Saving the Seasons-Introduction to Canning

Description: If you've always wanted to can foods but feel intimidated, this is the class for you.  Learn how to "save the seasons" by canning fruits and vegetables all year round from your own garden harvest or purchased from a farmer's market.  You'll learn about boiling water canning, atmospheric steam canning, and pressure canning.  Recipes and samples included.  Pre-registration required.  Class size is limited.

Berries and Bliss

Description: Everyone's favorite--blissful berries!  There are blueberries and blackberries, raspberries and strawberries, olallieberries and boysenberries.  So many berries! Come out for some berry-licious fun while learning how to preserve berries in a variety of ways.  We'll can jam, dehydrate berries for tea or trail mix, and learn how to freeze them properly for those summer smoothies.  Recipes and samples included. Galettes and Tarts and Pies, Oh My!

Description: For this class we will learn how to make the perfect flaky pie dough and freeze it.  We'll can some pie filling and demonstrate 3 different ways of using it.  Elevate your tea parties and summer gatherings with some delightful homemade baked goods from your own kitchen! Pick a Peck of Pickles

Description: This class is all about pickling!  We'll learn how to create different flavor profiles for sweet, sour or spicy pickles.  We'll demonstrate how to make quick and easy refrigerator pickles for that upcoming BBQ next week as well as how to can them and store in the pantry for winter (if they last that long). Recipes and samples included.  Pre-registration required.  Class size is limited.

Tomato Talk

Description: We're going to dive deep into the essence of this classic garden favorite--the TOMATO!  Learn how to prepare tomatoes for canning and dehydrating.  Learn how to can tomato sauce and discuss why acidity matters in canning.  Have you thought about drying them and grinding into powder, making them into leather, and other uses for these garden jewels?  If you have an abundance of tomatoes or just want to learn more about what to do with them, don't miss this class!  Pre-registration required.  Class size is limited.

Dehydration: The Dry Facts

Description: Explore how to properly and safely dehydrate fruits, vegetables, and meat with recipe ideas for how to use them.  Learn how to dry fruit for trail mix, make veggie chips, and marinate and dry beef for your own custom jerky.  We'll discuss dehydrators and demonstrate how to use them.  Samples and recipes included. Simply Sourdough

Description: We'll demystify the process of making sourdough bread in your own kitchen.  Learn how to make a sourdough starter and turn it into a delicious crusty loaf of artisan bread.  You'll learn about the tools required  for this process and share ideas for elevating the flavor with some compound butters  utilizing herbs and spices.  If you love bread and butter, don't miss this class!  Just in time for the holidays.  Tasting and recipes included.  Pre-registration required.  Class size is limited.

"Fall Festival of Flavors" Make It and Take It Workshop

Date: Tuesday, November 5, 2019

Class Fee: $50

Location: UCCE Auditorium, 2156 Sierra Way, San Luis Obispo

Description: Come and celebrate your harvest with gifts for the holiday feast.  This is a hands on lab class.  You will learn a variety of food preservation techniques while making your own holiday gift basket to take and share with family and friends or to give as a gift! In this class you will make classic cranberry sauce, chai tea, holiday quick pickles, mason jar mushroom soup, herbed salt brine, and a flavored finishing salt. (Basket items subject to change based on ingredient availability.)  Pre-registration and payment required.  Class size is limited to 12.  Minimum enrollment needed for class to occur. Register by Oct. 21, 2019.
