Chicken Soup
The flavors in this homemade and home preserved chicken soup are cleaner and fresher than any store bought soup. Not to mention beautiful! Using fresh picked or farmers market vegetables you can easily make a soup that will be a welcome gift to scare away the winter blues. This recipe does use chicken stock. A homemade stock is most flavorful but a store bought one will also work. If using packaged broth or the optional bouillon cubes be careful of how much salt is added. Always taste your soup and adjust salt and seasonings before canning. You can customize this recipe with the addition of dried herbs, do not use fresh. Fresh herbs can interfere with the tested pressure canning process.
When re-heating your delicious homemade chicken soup later, you can add precooked egg noodles, orzo, vermicelli or rice.
